Wood
was first laid out to aclimatise to the local environment.
As greenwoods like oak are highly hygroscopic (they absorb
lots of moisture from the air) they need to be left on site
for a couple of weeks.
To
cut any joints beforehand would mean running the very expensive
risk of losing the wood. The wood will contract or expand
depending on prevailing condition and thus change the position
of mortices and tennons.
